I struggle with getting my child to eat. He will nibble here and there, but will rarely eat an entire meal (unless of course it's chicken nuggest with apple slices). He does like pasta, and I've been able to make that healthy by choosing to purchase whole wheat pasta.
He's stuck to the 3%-5% percentile his ENTIRE life, so at this point I just know he's going to be a skinny minney. This is why I try so hard to ensure that the food that he IS in-taking is healthy.
Here is a meal I tried out tonight for Tuna Casserole that fits the needs I have and the nutrition needs he has:
(This is a dairy free version since I gave up red meat and dairy for Lent)
Tuna Casserole (dairy free version)
1/2 cup lemon juice
1 cup chicken stock
2 cup mushrooms
6 oz. drained tuna (canned in water)
1/2 cup white onion, finely chopped
3 cups whole wheat pasta
2 cup zucchini
1 tsp. black peper
2 tbsp bread crumbs (if desired)
Saute onions in lemon juice until translucent. Add zucchini, mushrooms and chicken stock and saute until tender. Cook pasta, and in casserole dish mix the cooked pasta, tuna and previous cooked mixture. Stir in black pepper and sprinkle breadcrumbs. Bake at 350 degrees for about 20 minutes or until well heated.
(This makes enough to feed 5 people)
