Beef Enchiladas



What you'll need:

1 pound of hamburger meat (or chicken)
2 garlic cloves
1 tbsp olive oil
6 soft tortillas
2 cups shredded cheese
2 cups enchilada sauce
1 cup of Tex-Mex style diced tomatoes
1 packet of McCormick burrito seasoning

Chop garlic cloves and cook for 5 minutes over medium heat in olive oil. Add hamburger meat, seasoning and cook until brown. Drain meat and set aside in mixing bowl and combine 1/2 cup enchilada sauce, diced tomatoes, 1 cup cheese. Stir mixture together and place in middle of tortillas. Roll tortillas up. In baking pan take the leftover enchilada sauce and pour half in the pan covering the entire bottom. Place enchiladas in pan and pour the rest of the enchilada sauce on top. Take leftover cheese and sprinkle along the top. Cover with tinfoil and bake at 350 for 30 minutes. Cook for a remaining 10 minutes uncovered to create a crispy crust if desired. I paired with refried beans, and topped with sour cream.
