Mojave Chipotle Tacos (Yields 6)
5 large eggs
Splash of milk
Light dusting of Mojave chicken seasoning
1 smoked sausage, cubed
Tortillas
Shredded Monterey cheese
Tabasco smoked chipotle sauce
Crack and beat the eggs, add milk and Mojave seasoning. Scramble mixture.
Fry smoked sausage with Mojave seasoning in separate pan until browned.
Combine eggs with sausage.
Top with cheese and tabasco sauce.
