Pineapple upside-down cupcakes!

This is a little twist transforming a normal cake into a cupcake!

{Cupcakes left to right: top to bottom: German Chocolate, Pineapple Upside-down & Funfetti}


What you'll need:
Pineapple cake mix
Pineapple juice
Eggs
Vegetable oil
Butter
Brown Sugar
Maraschino cherries
Pineapple chunks
Double the normal amount of cupcake tins

Prepare the cake mix according to recipe on back of box with the exception of replacing the water for pineapple juice.  Aside place cupcake tins in the pan and spray them down with any non-stick spray (for easy flipping when done cooking). Melt 1 cup of butter in microwave. Take a pinch of brown sugar and put in bottom of each tin. Pour in enough butter to make the brown sugar wet and stick one cherry in the middle and compact it down with fork. Take a spoon full of pineapple chunks and layer on top of the brown sugar/ cherry. Pour cake bater in on top. Bake and once COOLED open the cupcake tin and transfer into new tin flipping them upside down.
